This 2-Step Hazelnut Brittle Recipe Is The Perfect Halloween Treat

As Halloween creeps closer, bland candy haunts every corner. It lurks on drugstore shelves, in the grocery store, and of course, in your kid’s candy bags on the big night itself.

Here at Nature’s Garden, we usually opt to keep the sugar demons at bay. But, avoiding the sugar rush of Halloween is like dodging ghosts and witches on Halloween night – darn near impossible. 

As you know, a few too many mindless nibbles of those fun-size candy bars, and suddenly, you and your kids have overdosed on sweetness… and things get a little out of hand. We all know the effects sugar can have on the body and mind, so it’s important to try and choose snacks that have some nutritional value.

But fear not! We’ve conjured up a bewitching solution to escape the sugary spell – our secret stash of homemade Halloween treats. In the next few blog posts, we’ll share our favorites with you to spice up your Halloween. 

Why settle for the mundane when you can whip up delights that make your taste buds dance, move, and groove?

In this article, we dig into our candy cauldron for a decadent  Hazelnut Brittle recipe. This spellbinding delight comes from the witch that lives inside Nature’s Garden, and only calls for a couple simple ingredients. Because let's face it, homemade magic beats store-bought tricks any day!

Gluten-free and vegan, this easy recipe makes the perfect Halloween treat for friends, family, and trick-or-treaters alike. Be the talk of the town and get nutty this Halloween with this fan-favorite.

You’ll need… 

  • 1 1/3 cups sugar
  • 2/3 cup water 
  • Nonstick cooking spray
  • 2/3 cup of Nature’s Garden Roasted Hazelnuts, blanched, toasted and chopped

 Here’s what to do…

  1. In a small saucepan, mix the sugar with the water until you get the consistency of wet sand. Bring the mixture to a simmer over medium-low heat, stirring gently to dissolve the remaining sugar. Let simmer without interruption for 20 minutes, or until the mixture turns a light yellow color.

  2. Grab your Nature’s Garden Roasted Hazelnuts and blanche ⅔ of a cup. To blanche, bring water and a pinch of salt to a boil in a small saucepan, and add the hazelnuts for 5-6 minutes, reducing the heat to medium-high. Strain and place into ice water for 5-6 minutes. Then lay to dry.

  3. After blanching your hazelnuts, finely chop.

  4. Spray a small rimmed baking sheet with your cooking spray. Next, spread the chopped hazelnuts out on the baking sheet. Pour your caramel mixture (from step one) over the hazelnuts and let sit for 10 minutes, or until hardened.

  5. If you’re feeling fancy, sprinkle your mixture with your favorite Nature’s Garden trail mix, chocolate chips, or a sprinkle of sea salt.

  6. Break into shards and serve!
