Calling all cookie lovers! This recipe is the perfect combo of healthy and sweet for all your craving needs. These soft cookies are filled with yummy goodness that will make you want to make another batch after your first bite.
All you need are a few ingredients and our Probiotic Apricots!
Ingredients

¼ cup chopped Nature’s Garden Probiotic Apricots

1/2 cup of walnuts, chopped

1 cup instant oats

¾ cup whole wheat flour

1 ½ teaspoon baking powder

1/8 teaspoon salt

1/2 teaspoon cinnamon

1 large egg, room temperature

2 tbsp unsalted vegan butter
-
½ cup honey
-
1 tsp vanilla extract
Directions
Preheat oven to 325°F. Cut dried apricots and walnuts into 1/2-inch sized pieces, and then mix with oats in a bowl.
In a medium-sized bowl, whisk together the instant oats, whole-wheat flour, baking powder, cinnamon and salt.
In another bowl, whisk together the unsalted vegan butter, egg (make sure the egg is at room temperature before mixing in), and vanilla extract. Once mixed, stir in the honey until it is completely mixed in.
Add the flour mixture to the liquid, stirring until all ingredients are well incorporated. Fold in Nature’s Garden Probiotic Apricots and chopped walnuts.
Chill the cookie dough for at least 30 minutes.
Place the cookie dough into about 15 rounded scoops on a baking sheet.
Bake for 13-15 minutes and cool on baking sheet for 20 minutes before transferring.

For anyone looking for a healthier alternative to a traditional cookie, this is a great recipe to try out! Instead of using traditional sugar, we used natural honey, vanilla extract, and our Probiotic Apricots to add some sweetness without a lot of added sugars. This recipe is lower fat with only about 5g of total fat, has 20g of carbohydrates and about 3g of protein. Due to the healthier ingredients and macronutrient breakdown, this cookie could be a good option as a pre-workout or post-workout snack with the lower fat content and less than 2g of fiber. Especially before an intense workout, your body will want to fuel with primarily carbohydrates and a smaller amount of protein and fat as your body uses carbohydrates as the main energy source, particularly in aerobic based, but also in strength training exercises. These cookies provide a serving of whole grains with the use of instant oat and whole-wheat flour.
