Say Hello to Cucumber Christmas Trees

It's time to start thinking about christmas food. One of the easiest christmas snacks you can make are cucumber christmas trees! All you need is a cucumber, bell pepper and some christmas sprinkles or decorations. You'll also want to peel the cucumber so that it looks like an evergreen tree. Cut off thin slices starting from one end of the cucumber towards the other end, leaving small pieces at each cut site for stability as your work upwards toward the top of the cuke. Arrange them in alternating rows with two lines on either side to form "branches". Fill any gaps with thin slices of peeled cucumbers arranged in this fashion.

Optionally, melt dark chocolate according to package instructions by microwaving for 30 seconds and then stirring until melted. Transfer the chocolate to a piping bag or sandwich zip-lock bag with one corner snipped off. Drizzle christmas trees with dark chocolate in between each branch, up towards the top of the cucumber christmas tree. Decorate christmas trees as desired. You can use any number of sprinkles, christmas candies, or edible decorations. Place in the fridge for at least an hour to let the chocolate harden. Serve and enjoy!
