Ingredients

2 medium bananas

¼ cup of almond milk

¼ cup of maple syrup

2 teaspoons of vanilla extract

4 tablespoons of canola oil

2 eggs
-
2 cups of rolled oats
-
1 teaspoon of baking powder
-
½ teaspoon of baking soda
-
½ teaspoon of salt
-
1 teaspoon of cinnamon
-
1 ½ cup of grated carrots
-
½ cup of diced apples
-
1 ½ cup of Nature’s Garden Omega-3 Deluxe Mix

10 Pitted Dates
-
½ cup of water
-
3 tablespoons of coconut oil
-
3 tablespoons of almond butter
Date Glaze
Directions
Combine all dry ingredients, except for the omega-3 deluxe mix, in the blender.
Add in all wet ingredients (except for the apples and carrots).
Blend all ingredients for 30-35 seconds in a high-speed blender.
Add shredded carrots, diced apples, omega-3 deluxe mix and stir into the mix.
Transfer the mix to muffin tins (fill to the top). It should make about 12.
Put in the oven at 350F for 25 minutes. If not done, try 30-35 minutes.
For the date glaze, put 10 dates into a saucepan with ½ cup of water and simmer for 15-20 minutes.
Add dates to a blender with coconut oil, and nut butter and blend until smooth and creamy.
When muffins are cooled, add about 2 tbsp of the date glaze to the top of the muffins (optional).
