PB&J and Banana-Filled Cranberry Trail Mix Cookies

No-bake, Vegan, Gluten-free and 5 easy ingredients.

The title is a mouthful but so are these epic cookies! They make the perfect snack or dessert this holiday season. And, since they’re no-bake, they won’t take up any more room in the oven.

Here’s what you’ll need to make them!

  • 2 cups Nature’s Garden Cranberry Health Mix
  • 1/4 cup any nut or seed butter
  • 1 banana
  • Extra nut butter
  • Jam of choice
  • Chocolate chips
  • Coconut oil (optional)

Add trail mix and nut butter to a food processor and blend up it holds together when pressed. If needed, add in more nut butter or a splash of milk. Then roll the dough into 8 balls, and flatten them out.

On top of each cookie dough, put a thin slice of banana, a little peanut butter, and jam. Then top with another thin banana coin. Fold cookie dough around it and gently press until the banana is covered.

Repeat this with all of the cookies, then place in the freezer while you melt the chocolate chips (mix a little coconut oil into the chocolate to make it easier to dip into).

Once melted, coat each cookie in chocolate. Place them on parchment paper and let set in the fridge or freezer and enjoy! They store in the fridge for a couple of days or store them in the freezer to defrost whenever ya fancy!
