INGREDIENTS
- 1 cup dried mango slices
- 1 cup of walnuts
- 1 + 1/4 cup rolled oats
- 1 + 1/4 cup flour (all purpose)
- 3/4Β teaspoon baking powder
- 1/2 teaspoon baking sodaΒ
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 cup butterΒ
- 1 cup of brown sugar (light brown sugar)
- 1/3 cup white sugar
- 1 lemon peel, zestΒ only
- 1 large egg
- 1/2 teaspoon vanilla extract
Preparation: Preheat oven to 350 degrees. Cut mango and walnuts into 1/2-inch sized pieces, and then mix with oats.
In a separate bowl, combine flour, baking powder, baking soda, salt and cinnamon.
With a mixer, beat room temperature butter with sugars and lemon zest. AddΒ oat mixtureΒ for 2-3 minutes at medium speed until well combined. Add egg and vanilla and beat again for 2 minutes at medium speed. On the lowest speed, add flour mix till all combined.Β
Drop the dough onto a greased cookie sheet and bake for about 10 - 14 minutes. Cookies will be soft when they come out of the oven.Β
