Mango Walnut Cookies

Calling all cookie lovers! This recipe is the perfect combo of healthy and sweet for all your craving needs. These soft cookies are filled with yummy goodness that will have you wanting to make another batch after you have your first bite.

It’s time to grab your baking hat, preheat the oven, and get started!

INGREDIENTS

  • 1 cup dried mango slices
  • 1 cup of walnuts
  • 1 + 1/4 cup rolled oats
  • 1 + 1/4 cup flour (all purpose)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup butter 
  • 1 cup of brown sugar (light brown sugar)
  • 1/3 cup white sugar
  • 1 lemon peel, zest only
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Preparation: Preheat oven to 350 degrees. Cut mango and walnuts into 1/2-inch sized pieces, and then mix with oats.

In a separate bowl, combine flour, baking powder, baking soda, salt and cinnamon.

With a mixer, beat room temperature butter with sugars and lemon zest. Add oat mixture for 2-3 minutes at medium speed until well combined. Add egg and vanilla and beat again for 2 minutes at medium speed. On the lowest speed, add flour mix till all combined. 

Drop the dough onto a greased cookie sheet and bake for about 10 - 14 minutes. Cookies will be soft when they come out of the oven.
