Dried Cranberry and Walnut Salad Recipe

Picture this for your next meal: a bowl of wilted iceberg salad, topped with a few ragged carrot slices and waxed cherry tomatoes, sopped in cheap ranch dressing. Sounds appetizing, right? Not really! It sounds like a bland meal that will leave you looking for something else to eat.

Ingredients

  • Spring mix lettuce, 8 cups
  • Dried cranberry, 1/3 cup
  • Organic walnuts, roughly chopped and roasted, 1/3 cup
  • Crumbled goat cheese, 1/3 cup
  • Raspberry walnut vinaigrette, as desired
  • Salt and pepper, as desired

Instructions

Rinse, and thoroughly drain spring mix lettuce, then place in a salad bowl. Sprinkle all ingredients evenly over the spring mix lettuce. Individual servings can be dressed with vinaigrette, salt, and pepper according to taste preferences. Four servings are included in this recipe.

Some Notes to Think About

This refreshing salad can be made to suit. Feel free to add or omit ingredients as you like. The salad can be served as a side dish or modified into a meal by itself. Although the dried cranberry health benefits are hard to beat, all topping ingredients are merely suggestions. You can change the flavor profile by adding fresh sliced pears or apples or substituting crumbled bleu cheese or feta in place of the goat cheese.
